The holder of the certificat d'aptitude professionnelle "commercialisation et services en hôtel-café-restaurant" holds a position in the hotels, cafés-brasseries, restaurants sector.

He/she is able to:

- contribute to the welcome and well-being of French and foreign customers;
- provide services in hotels, café-brasseries, restaurants;
- prepare food in café-brasseries, hotels and restaurants;
- implement professional techniques specific to the activities ;
- contribute to the marketing of services;
- comply with current health and safety procedures;
- comply with the practices of the establishment in which you work and take account of the issues surrounding food and sustainable development

The course is organised into several skill modules, enabling step-by-step progression. It alternates between theoretical input, practical exercises and assessment sessions to promote practical and progressive learning.

BC01 - Organising services in hotels, cafés and restaurants

  • Receiving, checking and storing goods
  • Gathering all relevant information and organising one’s activities

BC02 - Welcoming guests, promoting services and providing customer service in hotels, cafés and restaurants

  • Welcoming guests, attending to their needs, providing information and contributing to the sale of services
  • Implementing set-up and preparation techniques
  • Apply professional techniques, deliver the service and follow up on it
  • Communicate appropriately in a professional context, in accordance with industry standards

BC03 - French and History, Geography, Moral and Civic Education

BC04 - Mathematics and Physics-Chemistry

BC05 - Physical Education and Sport (for apprentices)

BC06 - Health, safety and the environment

  • Apply a method for analysing a situation in professional or everyday life and relevant documentation
  • Link a physiological phenomenon, an environmental issue or a regulatory provision to a preventative measure
  • Propose a solution to resolve a problem relating to health, the environment or consumer affairs, and justify a choice
  • Communicate in writing and orally
  • Respond appropriately to an emergency situation

BC07 - Modern Foreign Language 

Throughout the course, learners receive personalised support with regular monitoring by the teaching team and progress reviews to tailor learning to each individual’s needs.

A work placement also enables learners to develop professional skills in a real-world setting.

Skills are assessed progressively through role-plays, practical exercises, professional projects and assessments carried out throughout the course.

Our teaching methodology prioritises a practical, work-focused approach: case studies, role-plays, practical scenarios and collaborative activities enable learners to learn in conditions that closely resemble the real working world.

Level 3ème or equivalent experience guaranteeing the ability to read and write French.

Good physical stamina and the ability to adapt to working hours are recommended. Organisational skills and good communication skills are also desirable.

Education Nationale certified teachers, Bac +3 trainers with significant experience in adult education, professional lecturers.


Assessments are organised throughout the course and at the end of the programme, in accordance with the qualification framework. Assessment tests may take the form of in-course assessments (CCF) and/or final examinations.

Support with exam preparation is provided throughout the course to help candidates succeed.

This qualification is awarded following validation by the academic examination board.

If a candidate fails the qualification, they retain credit for the modules they have passed and may retake the remaining examinations at a later date. The modules passed remain valid for 5 years
